Buckwheat and wheat noodles. They are served hot as noodle soup but also cold with sauce for soba tsuyu dip consisting of dashi, sweet soy sauce, mirin and other ingredients such as wasabi. In modern fusion preparations, we also find them in salads with chopped vegetables and sesame dressing (goma dare).
