Fermented flakes of dried smoked tuna skipjack. It is used as an ingredient in sauces but also in dashi broth which is the basis for many soups such as miso soup, as topping in soba noodles, takoyaki, okonomiyaki, rice. It is characterized by a strong umami taste.
