Very popular vegetable of Chinese and Japanese cuisine. Lotus roots have a crunchy texture and a neutral to sweet taste. They are used for tempura flour, in stir fry dishes in soups, they are used in syrup and pickles with vinegar, sugar, chili and garlic. They often filled them with meat or fruit and use them in salads with shrimps, sesame oil and coriander leaves.
