Shrimp paste known as kapi is made from salted small shrimp which are boiled, peeled, salted, dehydrated, mashed and fermented.
Shrimp paste has an intense color, aroma and salty taste of shrimp, rich in umami. We find Thailand in other cuisines of Southeast Asia and South China. Used as a natural flavor enhancer in curry pastes, dip sauces, soups, stir fry.
